I'm interested in wall paneling systems for TF or P&B design... There are lots of options for this, Mr. Holmz, but structural insulated panels (SIPs) are the prevailing method in our part of the US for covering [literally] either type of frame design. In other words, SIPs are used here to form the exterior walls of endoskeletal frame systems like a post and beam (P&B) or traditional timber frame (TF).
As I mentioned before, a well-designed plumbing system -- especially in a well-designed timber frame -- will not demand much from exterior walls. Electrical, on the other hand, is run through utility chases that are cut into the SIPs before assembly. By the way, a "well-designed" timber frame will usually employ one "wet wall" and, therefore, only one wall is effected by plumbing (which is also run through chases in the SIPs).
As for interior walls, normal stick framing is generally employed...and, as this is also the prevailing method, plumbing and electrical are run as they normally would be.
