So, I know you can drill perpendicular to the edge, so mitered or beveled edges will have pins normal to the face.
However, is it "simple" to drill at an angle into a face with the fence angle set or are there jigs to do this?
I have a need to put the dowels in at an angle, as I don't want to muck about with cutting them down, and thinner stock. If drilling in at angles is easier, I'd like to do that.

I'm not quite getting what you want to do - a bit like drilling at angle like a pocket hole?
Most tools can be made to do things they're not designed to do - make a jig out of ply to do it.
